I know buffs, tribute, discs, glyphs don't sync up and rightly so... does stat food affect my synced stats?

Yes it does, your stat food / drink is synced with your gear and it will be picked up in the same order as the game does when it consumes them. You can see what stat food / drink was synced with your character on its profile as well as when you are in equipment edit view.
