Hi Jpfaffl and welcome to the forums!
The portrait in your signature depends on the 3D model in your profile, so you will have to enable the helm in your profile to make it show up in the sig. To do this, use the 'Display character's helmet' checkbox in Manage character > Customize > Profile. (Please don't forget to click 'Save'!)
